What are some ways to make a wedding original?
My fiance and I are newly engaged and are having trouble planning a wedding that is not so "cookie-cutter". (We've been to four weddings since January and could pretty much make a play by play call of what was going to happen at each wedding.) We don't want our guests to be bored, and we don't want a lot of cliches….but I am just stumped at what to do to make this wedding "ours". Any suggestions would be so helpful! Thank you!

I made on last week and man was it a pain, LOL. 3 layers and the bottom was a 14" round cake pan. Was huge.

Remember to make sure you have EVERYTHING to make it in advance! We didn't and had to go to the store 2 more times.

Another thing is to get a rotating plate so that you can decorate the cake, it's a pain if you don't have one.

Also we made butter cream flowers and royal icing flowers. Make absolute sure you make them several days in advance! You will need a butt load of practice to get them right.

As for us using the huge cake pans well we have to almost make a tripe batch of the cake mixes (making home made chocolate and vanilla) for the bottom one alone and a double batch for the vanilla.

Anyhow, good luck! You will need it, hehehehehehe.

I don't know how to make a wedding cake, but you could try this recipe for the reception. It really is good and not hard to make. Plus, it is like a side dish and dessert combined.

    Stuffed Squid with Chocolate Sauce

    1 lb Squid, cleaned, dried
    1/2 lb Ground pork
    Olive oil
    1 Onion, finely diced
    1 sm Carrot, finely diced
    2 Garlic cloves, minced
    2 Parsley sprigs, minced
    1/4 c Bread crumbs
1/2 c Pine nuts, lightly toasted
    Salt, pepper
1 c Fish, shellfish or chicken
    -stock
    1/2 c Dry white wine
    10 To 12 almonds, blanched,
    -roasted
    1 oz Lbarra brand chocolate,
    -coarsely grated (see note)
2 sl Fried crustless French bread
    -(not sourdough)

Remove heads and tentacles from squid and set bodies aside. Mince heads and tentacles, then mix well with the ground pork (may use a food processor).

Heat about 1/2 inch of olive oil in a cassola or large skillet and saute the onion, carrot, garlic and parsley in it until the onions are wilted; add the pork mixture, crumbs and half the pine nuts, mixing together well and cooking until the meat is well done.

Season to taste with salt and pepper, then remove mixture from pan and drain on paper towels or in a colander.

Preheat oven to 350 degrees F.

When the pork mixture is cool, lightly stuff the reserved squid bodies with it (do not overstuff, or the squid will shrink and tear during cooking).

Bake the squid in a single layer, uncovered, in a lightly oiled baking dish for about 20 minutes.

Meanwhile, deglaze the cassola with the stock and wine, simmering until it is reduced by about half. While the liquid reduces, put the almonds, remaining pine nuts, chocolate and fried bread in a mortar and pound with a pestle until finely ground, then moisten with a bit of the liquid to make a thick paste (it must be fine, without grainy texture).

Add this mixture to the reduced liquid, stir in well, return to the boil and season to taste. Pour over the stuffed squid, or spoon onto serving plates and set the squid on top of the sauce.

Another thing you can do is to buy some carpet padding and put it in the back of your car. When you place the container on top it will help stabilize it during a car trip.Try to cover the container with a towel or blanket-keepit out of the sunlight if possible. Keep the car cool.Try not to get the cake wet if you are going to use ice packs. With the ice pack idea, you could do that, but I would suggest to first place the cake in one container and then place it in another larger container, the outside container holding the ice packs. If you are getting married the day after you arrive, you don't need to refrigerate the cake, just keep it in a cool place if possible. The fondant does keep it nice and sealed, you are right. The cake will taste fresh because the fondant does keep it sealed. If you absolutely have to, the cake may have little beads of moisture on it.Don't worry,it is just moisture from the fondant. You can soak it up with the corner of a paper towel, or just let it dry.But not necessary to refrig it overnite. Anyway,Good Luck.and CONGRATS to the bride and groom!BEST WISHES!

You can join strips of fondant together. I like to do it by gluing them side by side on another sheet of fondant. You can use water or vodka for the glue, or a little bit of meringue powder mixed with water (you can use egg white but not if someone is going to eat it). There's a tool called an herb mincer that's great for cutting narrow, even strips of fondant. I bought one at Target for $6. I used it for the white strips on the bottom tier of this cake: http://darkmindseye.deviantart.com/art/Hello-Kitty-Cake-95851049 It would be good for making the contrasting colors in your plaid, because you wouldn't have to try measuring very narrow strips and cutting them evenly with just a ruler.

You can roll over your drape with a rolling pin, but if you have areas that are thicker than the others, like strips laid over a main color, they may spread unevenly. I think it would probably work best to cut strips of the main color and then narrow strips of your stripe colors and lay them side by side on a larger sheet of fondant, using meringue powder/water as glue, then very lightly roll over it one time to join them together. If you roll it too much, it will get distorted.

If you decide to use a pasta machine, you can usually find them at Ross for about $15. I have one but it hasn't been very useful at all for my fondant work…I spend more time trying to get it unstuck from the machine than it's worth (it's great for rolling out sheets of bubble gum to make bubble gum roses for kids' cakes though), and I get better results just rolling the fondant with a nonstick rolling pin on a silicone mat, or even on a big sheet of smooth, clear vinyl…which is actually a good idea, if you need a very long fondant drape, because you can buy the vinyl at Walmart for about $3 a yard, and it's wide enough that you wouldn't have to buy very much of it, and then you wouldn't have to let part of your drape hang off your mat while working on another part.

I had a friend who'd make fake cakes for her cake decorating classes. She would cover round cake size styrofoam layers.♥

Most people don't usually do that. But if they went above and beyond for you, then tip whatever you feel they deserved. It's not required.

Same with your other vendors, don't tip anyone until after you see the final product/service in action and only if they go above and beyond the call of duty for you with outstanding service. If someone gives you bad or mediocre service/product and you tip them for it, that gives them the ok to treat other customers like crap and not do their job to the best of their ability.
